Banana Walnut Pancake


Makes about 5-7 pancakes ( Recipe adapted from here)

Ingredients

1 1/2 cups all-purpose flour
1 1/4 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 large egg, brought to room temp
1 1/2 tbsp. vegetable oil ( one can use melted butter too)
2 cups. buttermilk
2 small ripe bananas ( one can use 1 large too), smashed with fork
1/2 cup walnuts, roughly chopped
More butter or oil for greasing pan
Vanilla Essence few drops

Recipe

1. Whisk together the flour, sugar, baking powder, baking soda and salt in a large bowl.


2. In a separate bowl, whisk together the egg melted butter and then the buttermilk.

Buttermilk- is generally half yoghurt and half milk but in case yoghurt is unavailable quickly turn milk into a buttermilk substitute, simple add 1 tbs of lemon juice or white vinegar to 1 cup of milk and let sit for 10 minutes.


3. Mash the bananas using a fork .


4.Make a well in the center of the dry ingredients, pour the buttermilk mixture into the well and whisk a few times.


3.Right before the mixture is just incorporated, add bananas. A few lumps should remain. Do not over mix the batter or you will end up with chewy pancakes. I added few drops of vanilla essence for taste.


4.Heat a nonstick skillet over medium for 3 to 5 minutes and then low the flame to lowest. Brush the pan bottom with 1 tsp. oil or butter. Using 1/4 cup (or more than that) of batter per pancake, add the batter to the skillet I use a spoon to add the mixture to the pan and round in circles but one can use a small bowl (katori) to make similar shaped ones.Quickly sprinkle a few tablespoons of walnuts on each pancake.

5.Cook until large bubbles begin to appear, about 2 minutes. Flip the pancakes and cook until golden brown on second side, about 1 1/2 minutes longer. Repeat with remaining batter, brushing the skillet with oil/butter as needed between batches.

Serve them with a scoop of butter and maple syrup. I used home made vanilla sugar syrup. ( As mentioned in a previous recipe of mine here.


Note: Don't overcook or use less water for the syrup or else it crystallizes.

American Pancakes



Ingredients:

1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, slightly beaten
2 tablespoons vegetable oil
milk, just enough to make pourable batter

Preparation:

Combine dry ingredients. Stir in egg, oil, and enough milk for batter to pour easily. Mix lightly to blend. Cook pancakes on a hot, well greased griddle. This recipe for pancakes makes 2 to 3 servings.

Maple Syrup 


Ingredients

2 cups white sugar
1 cup boiling water
1/2 teaspoon maple flavored extract (I used vanilla essence)

Directions

In a saucepan, combine sugar and water. Cook and stir until sugar is dissolved. Remove from heat, and stir in maple flavoring. Serve warm.

Serve it with some butter on top. One can also garnish it with fresh strawberries on top and some ice cream to go with it.

Tip for strawberry : Froze fresh strawberries when in season and they taste same whenever you use them

Upma


Ingredients

1-cup semolina(Suji) (not too fine)

1 tsp. urad (dhuli ) dal

1 tsp. mustard seeds

One stalk curry leaves

Some grated cocunut/ cocunut powder

Three green chilies chopped ( or more depending on you)

One onion chopped coarsely

2 tbsp. oil

Salt to taste (1/2 tsp)

Pinch of sugar

2 cups water

Cashews ( 1 tsp)and Peanuts ( 2 tsp)
( if available...since I didnt have them so I didnt otherwise add them and its tastes awesome)

Coriander for garnishing

Recipe

1.Heat oil in a kadai.

2. Add the mustard seeds and cover with a plate so spluttering doesn't spoil the kitchen.

3. Once spluttering stops add green chillies, urad dal and curry leaves and nuts and fry on low till light golden.

4. Add onions. Stir and sauté till the onions are pink.

5. Add the semolina and stir continuously till the semolina gives out a nice aroma. It Takes about 7-8 minutes to roast the semolina on low.


8. Add the salt and sugar and stir. Carefully pour in a cup of water and stir well.



9. If it feels too dry, add more water( 1 cup) and stir. Keep on low and simmer for 2-3 minutes.

10 . Garnish with coriander (optional) I didnt add coriander. One can garnish with more cocunut too.

Serve hot with steaming coffee or tea or as breakfast.



Note: Always soak dals in water for 10-15 minutes before cooking and fry them till pink in the oil so that they get done.

Egg Bhurji !


Ingredients:-

Egg-1
Tomoto- 1/2 finely chopped
Onions -1/2 finely chopped
Garlic- small piece finely chopped
Green chilly-1 finely chopped
Capsicum- 1 piece finely chopped
Milk-1-2 drops
Red chilly powder-a pinch
Dry Pudina powder(mint)-1/2 tsp
Garam masala-1/4 tsp
Salt to taste
Ghee- 1 tsp

Recipe:-

1. Beat egg in a bowl and add a bit of salt, red chilly powder, pudina powder and milk to it.

2. Heat ghee in a pan and add all the chopped ingredients along with bit of salt to it. Fry it nicely so its cooked nicely.

3. Add the beaten egg to it and mix and turn it so it gets done into a misture. Keep doing it till the egg is done.

4. Add garam masala just before taking it off and mix it nicely.

5. Garnish it with coriander leaves if you want.

Egg bhurji is ready. Serve it with buttered bread cut into triangle pieces and some sauce in a plate.
